Decadent, dairy-free mousse with a secret ingredient!

A plant based dream with a secret ingredient that changes everything. You would never guess that sweet potatoes are the base of this deliciousness.


MannaBrew is South Africa's own mesquite superfood espresso. Naturally caffeine-free, rich in magnesium, potassium, iron and fiber. Smooth, slightly sweet, super earthy and oh so grounding.


Ingredients

  • 2 cups sweet potato, peeled and mashed

  • 1 cup coconut cream

  • 1/2 cup strong MannaBrew Mesquite Espresso

  • 6 tbsp cacao powder

  • 4 tbsp maple syrup

  • 2 tsp vanilla extract

  • Pinch of pink Himalayan salt


To serve:

Coconut cream

Dark chocolate shavings

Edible flowers


Method

  1. Sweet potatoes can either be cooked or roasted. Prick with fork. Bake for 90 min at 180C.

  2. Allow to cool, peel sweet potatoes. Add to bowl with remaining ingredients.

  3. Using a stick blender, blend until smooth and creamy.

  4. Scoop into glassware and serve with coconut cream, dark chocolate shavings and edible flowers. Enjoy with a hot cup of MannaBrew Mesquite Superfood Espresso.
